Gingerbread house DIY: handcraft your own delicious house with Olivia!

To make your gingerbread house, you’ll need the following ingredients (note: this recipe is closer to speculoos than traditional gingerbread, as it keeps longer):
For the dough:
- a pinch of salt
- 1 teaspoon baking powder
- 3 teaspoons of spices (anise, cloves, nutmeg, ginger)
- 250 g of butter
- 500 g of flour
- 375 g of brown sugar
- 1/2 teaspoon of cinnamon
- 2 eggs
- 100 g of ground almonds
For the decorative icing:
- 400 g of powdered sugar
- 1 egg white
- a few drops of lemon juice
Mix the butter (softened to room temperature), eggs, and brown sugar. Once combined, add the spices, baking powder, ground almonds, and flour. (Pro tip: mix the baking powder, ground almonds, and flour together first before adding them to the wet ingredients along with the spices, for the perfect texture.)
Let the dough rest in a cool, dry place overnight.
Roll out the dough thinly and cut out the shapes needed to build your gingerbread house. You can find gingerbread house templates online if needed.
Place the cutouts on a baking sheet and bake at a low temperature (175–180°C / 347–356°F) for 10 to 15 minutes, depending on the thickness of the biscuits. The recipe yields speculoos-style cookies, so they should be thin and crunchy.
Gradually mix the powdered sugar into the egg white until you achieve a smooth, but not too runny, consistency that will adhere to the biscuits. Add a few drops of lemon juice for a delightful flavor.
Once the cookies have cooled, use the icing to assemble your gingerbread house. Then, get creative by decorating it with the remaining icing.
